Lisbeth Paredes Quispe is one of the youngest female coffee producers in Sandia, Puno, and she’s redefining tradition with her innovative approach to coffee cultivation. On her farm, Finca Yanacocha, she grows exceptional Geisha and Bourbon varieties at 1,950 meters above sea level, an altitude that provides the perfect microclimate for high-quality coffee. In a region where producers are often risk averse, Lisbeth stands out for her dedication to improving processing methods, farm management and tree renewal. Her commitment to innovation and quality makes her one of the most outstanding producers in the area and Valle Inca.
Lisbeth has grown coffee since 2007. The farm is covered in dense vegetation and is highly productive. Lisbeth plans to apply homemade compost on all coffee plants to sustain and increase productivity.
Lisbeth and her family selectively handpick ripe red cherries and process them on the farm. She visually sorts and then floats the cherries to ensure only top- quality cherries are processed. She pulps the selected cherries, places the parchment in a plastic barrel, and ferments it for 36 hours. Following fermentation, Lisbeth washes the parchment in clean water and lays it out on covered raised beds to dry. She rakes the parchment frequently to ensure even drying. It takes approximately five days for the parchment to dry.
